{"id":527,"date":"2024-06-01T16:03:15","date_gmt":"2024-06-01T16:03:15","guid":{"rendered":"https:\/\/brotfarm.de\/?page_id=527"},"modified":"2024-06-10T05:56:36","modified_gmt":"2024-06-10T05:56:36","slug":"31-2","status":"publish","type":"page","link":"https:\/\/brotfarm.de\/?page_id=527","title":{"rendered":"Cool Running Rolls&#8230;"},"content":{"rendered":"\n<p><strong>&#8230;klingt doch super, oder?<\/strong><br><br><strong>Ich habe es ja gerade mit Abk\u00fcrzungen und entsprechend sind das die:&nbsp;<\/strong><strong>CRR<\/strong><\/p>\n\n\n\n<p><strong>Zutaten &#8211;&nbsp;<\/strong><strong>CRR<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500 g Mehl&nbsp;<em>(Ich nehme ein Gemisch aus 550er Weizen + 630er Dinkel)<\/em><\/li>\n\n\n\n<li>1 Packung Trockenbackhefe&nbsp;<em>(Ausnahmsweise mal &#8211; oder 1\/2 P\u00e4ckchen Frischhefe)<\/em><\/li>\n\n\n\n<li>1 1\/2 TL Salz<\/li>\n\n\n\n<li>360 ml Wasser<\/li>\n\n\n\n<li>extra Mehl zum Bestr\u00e4uben<\/li>\n<\/ul>\n\n\n\n<p><strong>Und das ist schon alles!<\/strong><\/p>\n\n\n\n<p><strong>Der Clou kommt erst mit der Zubereitung und dann wird auch klar wie der Name entstanden ist!!!<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Zubereitung &#8211;&nbsp;CRR<\/strong><\/h2>\n\n\n\n<p><strong>A) Part One &#8211; The Day before&#8230;<\/strong><\/p>\n\n\n\n<p>&nbsp;1.&nbsp;&nbsp;&nbsp;&nbsp;Am Vortag bzw. Vorabend vermischt ihr Mehl, Hefe und Salz in einer mittelgro\u00dfen Sch\u00fcssel (mindestens 2,5 l Volumen) und gebt das Wasser dazu. The Day after&#8230;<\/strong><\/p>\n\n\n\n<p>1.&nbsp;&nbsp;&nbsp;&nbsp;Am n\u00e4chsten Morgen den Ofen mitsamt einer feuerfesten und mit Wasser gef\u00fcllten Glassch\u00fcssel oder Fettpfanne auf der untersten Ebene auf 230\u00b0C&nbsp;<strong><em>(wenn m\u00f6glich&nbsp;UMLUFT \/ Pizzastufe)<\/em><\/strong>&nbsp;vorheizen.<\/p>\n\n\n\n<p>2.&nbsp;&nbsp;&nbsp; Zwischenzeitlich k\u00f6nnt ihr ein Backblech mit Backpapier belegen und den Teig mit Mehl best\u00e4uben.<\/p>\n\n\n\n<p><strong>Hinweis:<\/strong>&nbsp;<strong><em><mark style=\"background-color:rgba(0, 0, 0, 0);color:#f21b1b\" class=\"has-inline-color\">Ich nehme hier Dauerbackfolie, die ich auf meinem Holzschieber lege &#8211; Die R\u00e4nder zur unteren Mitte hin einschlagen, so dass ein runder Teigling entsteht und diesen dann so auf das Backblech oder eben &#8211; wie oben beschrieben &#8211; auf die Dauerbackfolie legen.<\/p>\n\n\n\n<p>3.&nbsp;&nbsp;&nbsp;&nbsp;Wenn der Ofen hei\u00df ist schneide ich die Oberseite der Br\u00f6tchen \u00fcber Kreuz mit einer Schere ein und schiebe dann mit Hilfe des Schiebers die Folie mit den Br\u00f6tchen auf das Blech\/den Pizzastein im Ofen. Nochmal sch\u00f6n mit Wasser bespr\u00fchen und Ofent\u00fcr schlie\u00dfen.<\/p>\n\n\n<style>.wp-block-kadence-advancedgallery werden bei 230\u00b0C Umluft&nbsp;<em>(geht aber auch mit Ober-\/Unterhitze)&nbsp;<\/em>f\u00fcr ca. 20-25 Minuten gebacken, bis sie die gew\u00fcnschte Br\u00e4unung erreicht haben.<\/p>\n\n\n<div
